Trader Joe's Drunken Spaghetti

Red wine is the secret ingredient in our Tuscan Drunken Spaghetti recipe. The alcohol cooks off, leaving savory flavor and a crimson hue. Trader Joe's ready-to-use ingredients are helpful, but not a must.

This Tuscan-style dish, known simply as Drunken Spaghetti, was a team effort. I did the shopping at our local Trader Joe's, and my husband did the cooking. I'm a lazy cook, and seldom make anything with more than 4 or 5 ingredients. Trader Joe's makes meal planning a breeze, as there are always many delicious fresh and frozen products to mix and match. We're huge fans of Trader Joe's ready-to-go basics like washed, chopped greens, candied nuts, and shaved Italian cheeses.

We own several Trader Joe's cookbooks, but this recipe is something we came up with ourselves. My husband provided a list of ingredients for a drunken spaghetti recipe he found in one of his many Tuscany cookbooks. I shopped for items that made the recipe quicker and easier. If you aren't fortunate enough to have a Trader Joe's market near you, just substitute similar products. We've made this same recipe sans wine, which also tastes delicious. Simply substitute a cup or two of water for the wine. Buon appetito!


  • 1 pound Trader Joe's Italian Spaghetti
  • 10-oz package cut and washed Organic Tuscan Kale
  • 1 Red Onion
  • 4 Cloves Fresh Garlic
  • 1/2 teaspoon Chili Powder
  • 4 tablespoons Extra Virgin Olive Oil
  • 750 ml bottle Red Wine
  • 5-oz tub Shaved Parmesan, Romano & Asiago Cheese
  • 5-oz package Candied Pecans or Walnuts
  • Salt and Pepper


  1. In large saucepan, saute chopped red onion, sliced garlic cloves, and chili powder in olive oil
  2. Bring four quarts of salted water to a rolling boil
  3. Add spaghetti and chopped kale, and cook for about 4 minutes
  4. Drain spaghetti and kale
  5. Add to saucepan, toss with onion/garlic mixture
  6. Pour in bottle of red wine
  7. Use spatula to mix ingredients and scrape bottom of pan
  8. Bring to a low boil and cook until wine is absorbed into pasta
  9. Pour into serving dish and top with shaved cheese and candied nuts
  10. Salt and pepper to taste

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ready to Serve in: 30 minutes
Yields: 4 to 6 servings
