Tortellini Vegetable Soup

Tortellini Vegetable Soup is packed with flavor and hearty enough for a stand alone main dish. Save prep time in the kitchen with ready-to-use grocery items from your local Trader Joe's.

This hearty Tortellini Vegetable Soup is perfect for a light meal-in-a-bowl any time of year. Trader Joe's Mirepoix is a huge time saver. The blend of fresh celery, carrots, and onions is chopped, cleaned, and ready to cook. This recipe also calls for a package of frozen vegetables in a creamy butter sauce, which adds even more spicy flavor and texture. Fresh Crimini mushrooms provide a savory counterpoint. These are sliced and ready to use, though we always rinse off packaged mushrooms in a colander before cooking with them.

The tortellini pasta is simmered in broth for a rich taste, and can be thinned to any desired consistency with water. Keep a kettle on just in case. My husband sometimes adds a glass of white wine to the broth for additional flavor. Top with a generous sprinkling of shaved Italian cheeses. Since the frozen vegetable melange already contains spices, you'll probably just need a dash of salt and pepper. This soup tastes even better the next day, in case you're lucky enough to have leftovers!


Ingredients

  • 14.5-oz tub Mirepoix (Celery, Carrots & Onions)
  • 16-oz package Frozen Vegetable Melange
  • 10-oz package Sliced Crimini Mushrooms
  • 4 tablespoons Extra Virgin Olive Oil
  • Two 32-oz cartons Low Sodium Vegetable Broth
  • 16 -oz package Trader Joe's Italian Tortellini
  • 5 -oz tub Shaved Parmesan, Romano & Asiago Cheese
  • Salt and Pepper

Instructions

  1. In medium saucepan, saute Mirepoix and frozen vegetables in olive oil until heated
  2. Add sliced mushrooms and cook for an additional 3 to 5 minutes
  3. Empty broth into large pan and bring to a rolling boil
  4. Add tortellini, reduce heat slightly, and cover pan
  5. Cook tortellini for 15 minutes, stirring occasionally
  6. Stir in sauteed vegetables and mix ingredients thoroughly
  7. Soup may be thinned with additional hot water and/or a glass of white wine
  8. Allow flavors to mingle for a few minutes
  9. Ladle soup into bowls and garnish with shaved cheese blend
  10. Salt and pepper to taste

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ready to Serve in: 30 minutes
Yields: 4 to 6 servings
